Natural gas or propane

Fuel is chosen at order time and is not a setting you change later, so it is the first decision to get right. Natural gas plumbs into a fixed line and never runs out mid cook, which is why it dominates permanent outdoor kitchens. Propane runs from a tank and keeps the grill movable, which suits a cart build or a site with no gas service. Burner count and construction

Burner count sets both the cooking area and how much of the grill you can run at once, which matters more than total BTU on a large grill. Bodies here are stainless steel, and the grade is the difference between a grill that survives ten seasons outdoors and one that pits in three. Several models add an infrared burner for high heat searing alongside the standard tube burners.
