How pellet cooking works
An auger feeds hardwood pellets into a fire pot at a rate the controller sets, so the grill holds a temperature the way an oven does rather than the way a charcoal kettle does. That is the whole appeal: you set a number, the grill holds it for hours, and the smoke comes from real wood rather than a chip tray. It makes long cooks genuinely unattended, which charcoal never is, and it gives you a wood flavor that gas cannot produce.
Build
Cooking surfaces here are porcelain coated, which is easier to clean than bare steel and does not need seasoning. Stainless steel is used through parts of the construction. Because the fire is contained in a pot rather than spread across a bed, flame ups are rare compared with grilling over gas or coals, which is part of why these suit longer cooks and larger cuts.
What to know before buying
A pellet grill needs mains power for the auger and controller, so the location has to have an outlet. Pellets are a consumable and different woods give noticeably different results, so budget for them the way you would for charcoal. Cleaning is also a real consideration: ash from the fire pot needs clearing periodically, and how easy that is varies by model.
